You need an ice cream maker to make it.

Ingredients

  • Unflavored gelatin (1/2 teaspoon)
  • Water (1 tablespoon)
  • Low-fat milk, divided (3 cups)
  • Large egg yolks (3)
  • Nonfat sweetened condensed milk (1 14-ounce-can)
  • Unsweetened cocoa powder (1/4 cup)
  • Chopped unsweetened chocolate (2 ounces)

Directions

  • In a small bowl, sprinkle gelatin over water; stand & stir 1 or 2 times while you make the base for the ice cream.
  • Use a saucepan of large size, pour ½ cup of milk into it, add chocolate & cocoa to the milk.
  • Cook the mixture at over medium temperature until steaming, get the egg yolks whisked & get the milk condensed in a medium bowl. Then pour in the hot milk & whisk until blended.
  • Put the mixture to the pan & cook at over medium heat, stir the mixture by a wooden spoon from 3 to 5 minutes until the back of the spoon is lightly coated. (Note: avoid boiling the mixture so that the custard won’t curdle)
  • Strain the custard into a clean large bowl through a fine-mesh sieve, add the softened gelatin and whisk until melted, whisk in the remaining 1 ½ cup milk, cover & refrigerate for 2 hours until chilled.
  • Get the ice cream mixture whisked and pour it into the canister in the ice cream maker. (Note: it is good to place the ice cream to firm up in the freezer before serving).

Chocolate Malt Ice Cream

This is a creamy and low-fat ice cream. You need an ice cream maker to make it.

Ingredients

  • Skim milk (2 1/2 cups)
  • Sugar (2/3 cup)
  • Nonfat dry milk (1/2 cup)
  • Malted-milk powder (1/2 cup)
  • Unsweetened chocolate, chopped (3 1/2 ounces)
  • Pasteurized liquid egg whites, (3/4 cup)
  • Vanilla extract (1 tablespoon)
  • Salt (1/4 teaspoon)

Directions

  • In a blender, blend sugar, milk, dry milk, chocolate and malted-milk until fairly smooth. Pour the mixture into a large saucepan and bring to a simmer at over medium temperate, whisking almost constantly, then remove from the heat.
  • Pour egg whites into a big bowl & whisk in the milk mixture in a steady stream and slow until smooth.
  • Whisk in salt & vanilla. Get the mixture refrigerated for 3 hours until cool.
  • Freeze the ice cream mixture in an ice cream maker. In case you want to make the ice cream for sandwiches, freeze until it is firm to hold a scoop shape.

Fresh Mint Chocolate Chip Ice Cream

You need an ice cream maker to make it.

Ingredients

  • Heavy cream (2 cups)
  • Whole milk (1 cup)
  • Packed fresh mint leaves (2 cups)
  • Large eggs (2)sugar (3/4 cup)
  • Fine-quality bittersweet chocolate (not unsweetened) (3 ounces)

Directions

  • Blend milk, cream, and mint in a blender until mint is chopped.
  • Put the cream mixture into a saucepan, boil it and then cool it for 15 minutes.
  • Whisk in sugar and eggs, cook at over moderate temperature, stir constantly, until slightly thickened and a thermometer registers 170°F. Remember not let the custard to avoid its curdling.
  • Pour custard into a bowl through a fine sieve.
  • Get custard chilled, cover its surface with plastic wrap from 3 hours – 1 day until cold.
  • Chop chocolate. Freeze custard in an ice cream maker.
  • Move ice cream to an airtight container & stir the chocolate.
  • Put ice cream in freezer until it is completely harden.

Ingredients

  • Chocolate bar (3.5-ounce)
  • Sweetened condensed milk (1 can)
  • Heavy creams (2 cups)

Directions

  • Break the chocolate bar into chunks & put them in a microwave-safe glass bowl.
  • Microwave the chocolate, remember to stop & stir every 30 seconds, until melted & smooth.
  • Stir condensed milk into the chocolate. Set aside.
  • Put the heavy cream in a big bowl and whip it by an electric hand mixer until stiff peaks form.
  • Folk the whipped cream into the chocolate mixture until completely incorporated.
  • Scrape mixture into an airtight container & cover.
  • Freeze for at least 2 hours before serving.

Maple Bacon Crunch Ice Cream

Ingredients

  • Bacon (10 slices)
  • Sweetened condensed milk or the fat-free kind (1 14-ounce-can
  • Maple extract (1/2 teaspoon)
  • Toffee bits (1/2 cup)
  • Cool whip (regular, light, or fat-free), (2 (8 ounce) containers)

Directions

  • Cook the bacon until crisp, then drain and cool on paper towels. Next, crumble.
  • In a large bowl, place the sweetened condensed milk. Stir in the maple extract and toffee bits. Fold in the Cool Whip and the crumbled bacon.
  • Put ice cream mixture into an airtight container.
  • Freeze overnight or for at least 4 hours.

Serve with chocolate sauce to have better flavor!

Peanut Butter Brownie

Ingredients

  • Sweetened condensed milk or the fat-free milk (1 14-oz -can)
  • Vanilla extract (1 teaspoon)
  • Creamy peanut butter (I like Skippy Naturals) (2/3 cup)
  • Regular, light, or fat-free Cool Whip (2 8-oz-containers)
  • Baked and cooled brownies, cubed (3 cups)

Directions

  • In a large bowl, put the sweetened condensed milk. Mix in the peanut butter & vanilla extract by a hand mixer. Fold in the brownie chunks and the Cool Whip.
  • Put ice cream mixture into an airtight container.
  • Freeze overnight or for at least 4 hours.
  • Serve the ice cream or serve as a brownie sundae.

Raspberry Bliss Ice Cream

Ingredients

  • Large frozen bananas (2)
  • Frozen raspberries (1/2 heaped cup)
  • Macadamias (2 tablespoons)
  • Coconut milk (1/4 cup)
  • Goji berries (1 tablespoon)
  • Cacao nibs/ (1 tablespoon) or chopped dark chocolate

Directions

  • Put frozen bananas, frozen raspberries, macadamias and coconut milk into food processor.
  • Blend the mixture until an ice cream is form consistently.
  • Topping with cacao nibs & Goji berries; mix lightly.
  • Peel prior freezing.

Salted Caramel Ice Cream

Ingredients

Ice cream base

  • Coconut milk (2 13.5 oz cans)
  • Sea salt (1 & ¼ teaspoon)

Caramel

  • Honey (1/2 cup)
  • Unsalted butter/ or ghee (8 tablespoons)
  • Vanilla (1/2 teaspoon)

Directions

  • Cook the honey in a sauce pan until it reaches the soft boil stage at around 250 degree.
  • Get the pan removed from the stove top. Add in the butter.
  • Get the butter whisked into the honey until it is perfectly incorporated. Next, whisk in the vanilla.
  • Let the mixture cool for 5 minutes.
  • Add sea salt, caramel and the coconut milk in a blender; blend from 2 to 3 minutes.
  • Pour in the ice cream maker for 15-20 minutes until se.
  • ;Freeze the mixture for 2 hours.
